Thyme to Sparkle


  • Mirabeau La Folie Sparkling Rosé
  • 20ml Mirabeau Dry Gin
  • 15ml Elderflower Liqueur
  • 5ml Thyme Syrup
  • Thyme


For the Thyme Syrup:

  • 1 cup water
  • 1 cup sugar
  • 6 sprigs of Thyme

Over a gentle heat melt the sugar in the water. This will turn slightly cloudy and then clear when it is fully dissolved. This makes your simple syrup. Add the Thyme to the hot solution and let it cool. The longer you leave it the stronger the thyme flavour will be. Discard the thyme.

For the Cocktail:

Combine the elderflower liqueur, thyme syrup and gin then top up the rest of the glass with a generous serving of La Folie.
